Sweet Potato Taquitos & Squirrels Doin’ It

Welcome to the summer! Well, what’s left of it. We’re starting pretty late in the summer-game. But here’s to a few weeks of warm eats. And blogging practice. Whoo-hoo?

For our kick-off meal of the week, we made delicious Sweet Potato Black Bean Cream Cheese Taquitos. In a word, they were more than adequate–which is three words, but like they were too yummy for one word.

[Brynne’s note: Lynn did all the cooking. I don’t remember what I did. Probably put away some dishes or something like that.]

We thought that this photo was not particularly endearing–it didn’t capture the ESSENCE of these taquitos (sidenote: our spellcheck says that we are spelling “taquitos” wrong, but we looked it up. that’s the correct spelling! (double sidenote: spellcheck also says that “sidenote” is not one word)) so we decided to go in for some close-ups.

 

 

Are you like “Hey, so I’ve read this far, I’ve looked at the food pics, what’s up with squirrels doing it??”

WHAT IS UP WITH SQUIRRELS DOING IT?!??! RIGHT AS YOU ARE WALKING IN TO YOUR HUMBLE ABODE ON THE EDGE OF THE GARDEN CLOSEST TO THE SIDEWALK??? WHY THERE??? Didn’t need to see that right after free yoga in the park!!!!

Seriously, thank you for coming on this journey. I hope you will visualize the squirrels along with us because it’s a vision that we don’t desire to hold alone. Thank you for being with us in this moment. Stay tuned for more food & more nature. 😉
